Ingredients
2 servings
Marinade for chicken
280gchicken breast
1 tablespoonolive oil
1 teaspoonpaprika
½ teaspoongarlic powder
¼ teaspoonblack pepper
½ teaspoononion powder
1 teaspoonsalt
or to taste
For sauce
2 tablespoonolive oil
1onion
small, finely chopped
3garlic cloves
½ teaspoonsalt
ing, or to taste
½ teaspooncumin powder
1 teaspooncajun
½ teaspooncayenne chilli
½ teaspoonblack pepper
250gpassata
½ cupdouble cream
fresh parsley
to garnish
Yellow Rice
Instructions
Step 1
Cut the chicken into bite size chunks and marinade using the ingredients listed, Set aside for at least an hour
Step 2
Wash and soak rice for 30 mins, wash until water runs clear
Step 3
On a hot pan or pot, add oil and once hot add the onions
Step 4
Saute on medium heat for about 1 minute then add the garlic
Step 5
Get it golden brown, put on low heat then add the spices; cumin powder, coriander powder, turmeric powder, chilli powder, black pepper, salt

Mix, after 30 secs then add a splash of water to help cook the spices
Step 7
After about 90 seconds add the rice
Step 8
Put on medium heat and saute rice gently for 3 minutes

Add the chicken stock and water

Stir and put it on medium high heat

Get it to a boil then cover with lid for 5 mins

After 5 mins turn to low heat for 10 mins

Let it stand for 10 mins before fluffing it up

While the rice is cooking make the chicken

On a hot pan or skillet, heat some oil then add the chicken

Cook chicken 2 mins on each side, we'll finish cooking it in the sauce

Remove chicken and on same pan add a little more oil if needed

Add the onions, saute on medium heat for one minute then add the garlic

When it turns golden brown add the spices, put on low heat

Cook this for around 2 minutes, ensure spices don't burn

Add the passata, cook for around 3 mins then add the chicken

Cook for 5 minutes then add the double cream

Stir the double cream and cook for a further 5 mins

Finish with fresh coriander

Build your wrap; first layer is rice, then the chicken then some sliced red onions on top. Wrap them toast on both sides. Enjoy!
