Instructions
Step 1
Chop chicken breast into cubes and marinate in smoked paprika, brown sugar, hot sauce, salt, and pepper. Add to medium heat and sauté with olive oil and garlic for 20 minutes.
Step 2
While the chicken is cooking, finely chop your tomatoes, mango, red onion, and mix together with salt and the juice of half of a lime.
Step 3
Cook 1 cup brown rice to add to the base of your bowl. Top with cooked chicken, sweet corn, black beans, and your homemade mango salsa. Add avocado and the salsa of your choosing.
Step 4
Squeeze the other half of your line and enjoy!
