Ingredients
16 servings

2 lbsboneless skinless chicken breast

3 tablespoonsolive oil

2 Tablespoonslemon pepper

2 cupswater
or enough to almost cover chicken

1white onion
or yellow
10 ouncecanned diced tomatoes and chiles

4 ouncecanned diced green chiles

2 x 15 ouncecanned white beans
cannellini or great northern

15 ouncecanned corn
drained
Instructions
Step 1
Heat olive oil in large pot
Step 2
Add chicken breast and lemon pepper. Add water and bring to boil. Reduce heat to medium or medium low to steady simmer
Step 3
While chicken simmers, dice onion and open cans.
Step 4
Simmer chicken until cooked through and the liquid reduces and to a nice broth - about 20-30 minutes
Step 5
Remove chicken breasts and set aside
Step 6
Add the diced onion to the broth and let simmer until soft.
Step 7
Add beans with liquid, Rotel, drained corn, and chiles to the broth and onions
Step 8
Cut cooked chicken into bite-sized pieces and return to pan, stirring ingredients together
Step 9
Cook at medium to medium low for 20 minutes until warmed through and beans have softened slightly, stirring occasionally.
Step 10
Serve in bowls and top with a squeeze of lime, shredded cheese, tortilla chips, and lime zest sour cream or plain Greek yogurt.
