Step 1
Preheat oven to 400°. Line a baking sheet with parchment paper and set aside.
Step 2
Cover asparagus with melted oil and put in oven.
Step 3
Add coconut milk to a shallow bowl.
Step 4
In a separate shallow bowl, combine the shredded coconut, paprika, garlic powder, salt and pepper.
Step 5
Soak the cod in the milk for one minute on each side. Dip in the shredded coconut mixture, coating both sides. Transfer fish to the baking sheet and bake for 12 to 15 minutes, until cooked thoroughly and flaky.
Step 6
When you put the fish in the oven, check the asparagus and assess how much longer it needs to bake.
