Pistachio Cardamom Orange Yogurt Bread

Gorgeous pistachio poppy seed orange yogurt bread naturally sweetened with honey and topped with a lovely orange glaze. This incredible orange loaf is filled with fresh orange juice and zest, and is the perfect bread for spring!

Ingredients

⅓ cupcoconut oil
melted
⅓ cupmaple syrup
or golden syrup
1zest from orange
large
½ cuporange juice
freshly squeezed
½ cupcoconut yogurt
2Vegan egg subsitute
or flax eggs
1 teaspoonvanilla extract
1 cupwhole wheat flour
1 cupall purpose flour
1 teaspoonbaking powder
½ teaspoonbaking soda
¼ teaspoonsalt
1 teaspooncardamom powder
½ cuproasted pistachios
chopped
Instructions
Step 1
Preheat oven to 350 degrees F. Line a 8 x 4 inch pan with parchment paper and spray with nonstick cooking spray.
Step 2
In a large bowl, whisk together the melted coconut oil, maple syrup and orange zest until smooth. Next, whisk in orange juice and coconut yogurt. Finally, whisk in the two flax eggs and vanilla extract.
Step 3
In a separate bowl, whisk together the whole wheat flour, all purpose flour, baking powder, baking soda, salt, and cardamom powder. Add dry ingredients to wet ingredients and mix with a wooden spoon or until just combined. Gently fold in chopped pistachios.
Step 4

Pour batter into prepared pan and spread out evenly.
Step 5

Bake for 35-40 minutes until tester comes out clean.
