Banana Muffins, Whole Grain

Yummy! *Tip for Quick Banana Ripening: If your bananas are not ripe, place unpeeled bananas on a baking sheet in oven at 300 F until peels turn black around 15-20 minutes. Remove from oven and remove peels. Use in recipe. *If your grocery store does not carry white whole wheat flour, it can be purchased from Amazon Fresh, Whole Foods or at some Target stores. Excess flour can be sealed in a Ziplock bag and stored in freezer for up to 1 year. Bring flour to room temperature before use or storing in another container.

Instructions

Step 1
CCP: Always wash hands before preparing food. CCP: If you have a resident with a food allergy, carefully follow protocol and always read all ingredient labels.
Step 2
1. Preheat oven to 350 F. Coat muffin pans with non-stick spray or use paper liners. Mix together both flours, baking powder, baking soda and salt; set aside.
Step 3
2. Combine bananas, sugar, egg, melted butter and applesauce in large bowl. Fold in flour mixture and mix until smooth. (Don’t overmix). Scoop into muffin pans.
Step 4
3. Bake in preheated oven for 20 to 25 minutes. Muffins will spring back when lightly tapped and a toothpick inserted in middle will come out clean.
Step 5
4. Cool in the muffin pan for 10 minutes, then remove muffins and continue to cool on cooling rack.
Step 6
CCP: Cover, label and date leftovers. Consume or discard leftovers within 3 days of preparation.
