Bolognese Sauce

Makes a bulk batch with plenty to freeze. Let leftover sauce cool in the fridge overnight; portion into Ziplock bags before freezing. To reheat, remove sauce from bag and put in a microwave safe bowl; defrost in microwave for 6 minutes or until the block of sauce can be easily broken with a spoon, then heat on high 2 and a half minutes or until the sauce is hot.

Instructions

Step 1
Peel and dice the vegetables
Step 2
Heat the oil and 1 tbsp butter over medium high heat (6 on front left) until it's sizzling
Step 3
Add the onion, oregano, and seasoning salt and sauté until it starts to brown
Step 4
Add the carrots and granulated garlic and pepper and continue to sauté
Step 5
Add garlic
Step 6
Add 1/3rd of the ground beef as well as the fennel, red pepper flakes, and Italian seasoning mix

Continue adding beef 1/3rd at a time, breaking it up with the spatula and waiting until there is no pink before adding more

Once all the meat is in, cook off all the moisture and brown
Step 9
While meat is browning, prep San Marzano tomatoes by crushing or mashing

Add tomato paste and fry until fragrant
Step 11
Once meat is well browned, deglaze with beef broth

Add tomatoes, parsley, basil, and Worcestershire

Bring back up to a boil (taste for seasoning, add salt if necessary), reduce heat to simmer, and let cook for at least an hour

Remove from heat and add the 4 tbsp butter
Step 15
Cook your pasta according to package directions
Step 16
Add some of the pasta water to the sauce before draining the pasta
Step 17
Finish cooking the pasta in a portion of the sauce
Step 18
Top with shredded cheese
