Instructions
Step 1
Melt butter in a large skillet over medium heat.
Step 2
Add shrimp to skillet and sprinkle with taco seasoning.
Step 3
Cook shrimp for 2-3 minutes then flip, sprinkle with taco seasoning again, and cook an additional 2-3 minutes.
Step 4
Remove shrimp from skillet, cover and set aside.
Step 5
Mix mayonnaise, hot sauce, and Rotel together in a small bowl.
Step 6
Melt another tbs of butter in skillet. Add tortilla and let cook for 3-5 minutes, then flip.
Step 7
Spread mayo mixture lightly over the tortilla. Top with shredded cheese.
Step 8
On one half of the tortilla, place shrimp. Fold the other side of the tortilla on top of the shrimp side.
Step 9
Let cook for 3 minutes more, then flip quesadilla and let cook for 3 minutes on the other side, or until lightly browned on both sides.
Step 10
Repeat process with each quesadilla.
