Step 1
Boil 8 unpeeled medium potatoes until tender. In a large bowl add oil, vinegars, sugar, parsley, salt and pepper. Grate one medium onion add to bowl.
Step 2
Once potatoes are tender drain and cool. When cool enough to hold, peel and slice into bowl with vinegar mixture and stir. Add the 1 cup of mayonnaise and stir. Sprinkle with dill weed and sliced green olives.
