Cheese Enchiladas

Ingredients
8 servings
1 cgoat cheddar cheese
grated, opt . topping
1 Cplain yogurt
optional topping
2 Tablespoononion
chopped, optional topping
3 tablespoonoil
1 Tablespoonchili powder
2 tablespoonflour
2 cwater
1 tvinegar
½ tgarlic powder
½ toregano
½ tsalt
or less
8brown rice tortillas
2 Tablespoonoil
optional
2 Cpinto beans
cooked, or black
4 Tablespoongreen onion
chopped
1 Ccottage cheese
soft goat cheese or plant-based ricotta
0.5 Cgreen
chopped, red, or other color, pepper
0.25 Calmonds
chopped, or sunflower seeds
0.5 Cwheat germ
optional
0.5 Cblack olives
chopped, or green, optional
Instructions
Step 1
Combine sauce ingredients.
Step 2
Bring to a boil; simmer 5 minutes.
Step 3
Fry tortillas in hot oil briefly. (I don't use oil.)
Step 4
Mash beans and other filling ingredients.
Step 5
Divide filling among tortillas and roll up.
Step 6
Place seam side down in shallow baking dish.
Step 7
Pour sauce over all.
Step 8
Top with cheese.
Step 9
Bake at 350° for 20 minutes, basting occasionally with sauce.
Step 10
Serve with yogurt and onion mixture, if desired.
