Step 1
De-stem and slice pepperoncini. Add to ricotta cheese and onion salt. Then blend until smooth in a food processor. Set aside mixture.
Step 2
Cut eggplant into thin slices, approx 1/8 inch. Bread and fry until golden brown.
Step 3
While frying, heat tomato sauce in pan. Butter bread slices with garlic butter until toasted.
Step 4
Alternate layers of eggplant and tomato sauce until desired sandwich height is reached. Add ricotta mixture to top bun. Slice in half and serve.
