Instructions

Step 1
Boil your peas in some salted water for 15 mins, drain and set aside.
Step 2
In a pan over medium-low heat, melt butter and add diced ham. Sizzle for about 2/3 mins or until sexy.
Step 3
Add your peas and your wine and let it evaporate for about 5 mins, stirring occasionally.
Step 4
Season with a pinch of salt and pepper.
Step 5
Add your cream and let it thicken for a couple of mins.
Step 6
In the meanwhile, boil your tortellini in some salted water for the time indicated on the package.
Step 7
Add your tortellini to your sauce and toss well over the heat to combine all the flavours together.
Step 8
Drizzle a drop of olive oil on top if necessary.
Step 9
Turn off the heat, season with a pinch of nutmeg and always Parmigiano like there’s no tomorrow.
