Ingredients
2 servings
7 cupsfrozen broccoli
0.5 packagemung bean vermicelli noodles
2yams

½ Tbspbaking soda
¼ cuparrowroot starch
¼ cupwater
2 Tbspsesame oil
Peanut Sauce
Instructions
Step 1
Set oven to 435F
Step 2
Bring a pot of water to boil with baking soda.
Step 3
Chop yams to bite-sized pieces. Partially thaw broccoli under hot water.
Step 4
Add yams to boiling water. Boil for 4 minutes.
Step 5
While yams are boiling, mix arrowroot and water in a large bowl until completely disolved.
Step 6
Oil parchment-lined baking sheet with 1 tbsp sesame oil.
Step 7
Once yams finish boiling, toss in arrowroot mixture until starch mixture starts to thicken.
Step 8
Place yams on the baking sheet, evenly spaced out.
Step 9
Squeeze out excess water from the broccoli. Toss in 1 tbsp sesame oil, salt, and pepper to taste.
Step 10
Place both pans in the oven for 40 minutes. Flip halfway through.
Step 11
Blend ingredients in peanut sauce.
Step 12
Bring another pot of water to a boil.
Step 13
Add vermicelli noodles. Boil for 3 minutes, then strain.
Step 14
Mix all ingredients in a bowl.
