Sweet Potato Hash

Instructions

Step 1
In a cast iron skillet cook bacon
Step 2
Remove some of the bacon fat and add the cubed sweet potatoes to the cast iron skillet
Step 3
Season with salt and pepper
Step 4
Let cook for 5 minutes with a lid on, without moving, so the potatoes can caramelize
Step 5
After 5 minutes turn the potatoes and add the lid back on. Cook for 5 more minutes without stirring.
Step 6
Uncover and flip potatoes once more. Let cook for about eight more minutes, uncovered.
Step 7
Remove potatoes

Add 1 tbs coconut oil and then add the onions, poblano peppers and garlic
Step 9
Sautee for about 3 minutes until softened
Step 10
Add sweet potatoes back to pot

Add more salt and the onion powder

Mix together and let finish off for about two more minutes.
Step 13
Taste the sweet potato to make sure it is not hard. If it is soft it is ready to serve.
Step 14
Optional: Add cubed smoked ham to the pan after you remove the hash and let saute for about 5 minutes. Add to hash.
Step 15
Another idea: Add steamed Brussels sprouts when you add the onions and garlic (this was an idea my friend had!)
Step 16
Top with poached egg and some fresh dill. Serve immediately.
