Cauliflower Mash Shepherd’s Pie

Instructions

Step 1
Preheat oven to 180°C
Step 2
Place the Cauliflower florets in a medium sized saucepan, cover with water and bring to the boil. Let the florets boil until they are soft, about 15 minutes.
Step 3
Heat the oil in a large skillet, add the onion and carrot. Cover the skillet and cook until the onions are transparent.
Step 4
Add the mince beef, salt, pepper, garlic, and crumbled beef stock cube to the skillet. Cook through until the beef is browned, and some liquid has risen.
Step 5
Pour the beef mixture into an oven proof dish.
Step 6
Once tender, drain and mash the cauliflower with the butter and a pinch of sea salt.
Step 7
Top the beef mixture with the cauliflower mash and spread out evenly with a wooden spoon or spatula.
Step 8
Top with the grated cheese.
Step 9
Bake the shepherd’s pie for 25 minutes.
Step 10
Top with chopped parsley. Enjoy!
