JUST Egg (egg-free, dairy-free) Air Fryer Quiches

As I transitioned to plant-based eating, one of the hardest things to find replacements for was egg scrambles or quiches (taste, texture, and smell). 
JUST Egg has been the best egg replacer I have found! I use it often for breakfast/brunch meals and even in other recipes (egg-free challah bread, cookies, cakes, etc.). It is delish! I use the JUST Egg Veggie Scramble in the recipe for scrambled eggs, and for the egg on my breakfast sandwiches.
Air Fryers, like JUST Egg, are amazing! They make cooking easy! Some accessories I bought included a mini quiche silicone pan for the air fryer, so I needed to develop a recipe! Stat!

Ingredients

Plant-based milk
oat, almond, cashew, etc

assortment of your choosing

¼ cupCheese
shredded Dairy-free, for example, Violife, Follow Your Heart, Miyoko, etc, assortment of your choosing

½ teaspoonHimalayan Sea Salt
Pink, to taste

¾ teaspoonPepper

Kala Namak Salt

Instructions
Prep for JUST Egg Veggie Scramble
Step 1

Clean and chop the assortment of veggies. If the dairy-free cheese(s) are in slices or blocks, shred or cut them into smaller pieces.

Whisk the JUST egg, plant-based milk, pepper, and chosen spices in a mixing bowl, but WAIT on the Kala Namak Salt. (FYI, I added more spices than pictured.)

Mix in the veggies and dairy-free cheeses with the JUST egg mixture.

Step 4

Getting a mix of veggies and cheese(s), use a 1/4 cup to scoop and pour the mixture into the mini-quiche pan (or, cupcake holders).

Carefully, place the mini-quiches into the Air Fryer and set it to 350 degrees for 15-20 mins.

The quiches are done when the top is browned and a toothpick comes out dry.

Store prepped “JUST Egg Veggie Scramble” for more quiches, scrambles, or breakfast sandwiches.
Step 8

Let the mini-quiches cool for about 5-10 minutes.
Step 9

Once cooled enough to handle, pop the mini-quiches out of the silicone pan or cupcake holder.
Step 10

Sprinkle some Kala Namak Salt on them and serve!
