you can use any kind of beef. stew beef is great, but any cut of beef, cut into cubes is good.

Ingredients

1 lbbeef
cubed

14 cupswater

3beets
small, peeled, cut into chunks and sliced thin

2 Tbsptomato paste

1 Tbspsugar

1 Tbspwhite vinegar

3 Tbspolive oil

1 ½ Tbspbutter

1onion
diced

1 ½ cupcarrots
grated

3potatoes
medium, sliced and peeled

0.5 headcabbage
chopped in small slices

¼ cupparsley
chopped small

2cloves garlic
minced

salt
to taste

pepper
to taste
garnish
Instructions
Step 1
rinse meat well with cold water
Step 2
place meat into 14 cups of water, and bring to boil. let simmer on low heat for 45 mins
Step 3
as water + meat boils, remove the scum as it forms on the top. SUPER important
Step 4
prep all veggies: chop / grate / mince
Step 5
heat olive oil in medium saute pan, add sliced beets + vinegar and sautee for 5 mins
Step 6
mix in tomato paste + sugar and mix, sautee for 1 more minute
Step 7
remove beets from pan, and reuse the same pan to heat the butter
Step 8
sautee onion for 2 mins in butter, then add carrots and sautee until carrot is slightly browned (no more than 5 mins?). once done, shut off heat and set aside
Step 9
after meat has simmered for 45 mins, add in potatoes and return to boil. allow them to cook for 5 mins
Step 10
stir in cabbage and all sauteed veggies, salt + pepper, and let simmer for 5 mins
Step 11
stir in parsley
Step 12
shut off heat, serve with yogurt + dill. enjoy!
