Instructions

Step 1
Soak rice noodles by complete submersion in warm water (30 min.), drain. (Or according to pkg. directions)
Step 2
Bring water to boil in pot; add drained noodles & cook (2 min.) Remove from heat & drain promptly to prevent noodles from getting mushy.
Step 3
In sm. bowl, mix together “sauce” ingredients; pour onto noodles & mix well.
Step 4
Add cabbage, carrots, chicken, & half of chopped cilantro, green onions, & peanuts. Mix well with noodle mixture. (Reserve other half for garnish.)
Step 5
Garnish with the rest of chopped cilantro, chopped green onions, & chopped peanuts when ready to serve. Enjoy!
