Ingredients
2 servings
5.5 ozgluten free noodles
or soba
10.5 ozbutton mushrooms
sliced
1 bunchbroccolini
⅔ cupkale
2.5 ozedamame
1scallion
thinly sliced
1chili pepper
thinly sliced
2 tspsesame seeds toasted
Teriyaki Sauce
Instructions
Step 1
Bring a medium saucepan of salted water to the boil. Add noodles and cook for 3-4 minutes, or until cooked. Drain and rinse with cold water then set aside.
Step 2
Combine teriyaki sauce ingredients in a bowl and set aside.
Step 3
Heat a non-stick skillet over medium heat. Add tempeh and mushrooms and cook for a few minutes, until just beginning to brown. Cook for a few more minutes, tossing occasionally.
Step 4
Add broccolini and kale, cover and continue to cook for a few more minutes until just tender. Stir through teriyaki sauce and toss with noodles and edamame to warm through
Step 5
Transfer to bowls and top with scallion, chili, and sesame seeds.
