Instructions
Step 1
Boil diced chuck roast in a pot with water, onion, garlic, salt and bay leaves for 1 hour. Skim fat off the top.
Step 2
In a separate pan, heat a small amount of oil and add dried chiles and garlic. Toast until fragrant (a few minutes) and then add to a blender along with peppercorns, cloves, water, and onion and garlic from stew pot.
Step 3
Strain blended sauce back into beef stew pot.
Step 4
Add oregano, thyme, cumin and beef bouillon to stew pot and simmer for 2 hours or until tender.
