Ingredients

2 cupslettuce
chopped, I recommend iceberg or romaine
1baby cucumber
chopped
¼ cupartichoke hearts
chopped
¼ cupsun-dried tomatoes
chopped
¼ cupshredded vegan cheese
optional
2 Tbsphemp hearts
½ cupchickpeas
2 Tbspextra virgin olive oil
1 ½ Tbspred wine vinegar
1 ½ tspdijon mustard
salt
pepper

Instructions
Step 1
1. In a bowl add the lettuce, cucumber, artichoke hearts, sun-dried tomato, cheese and hemp hearts
Step 2
2. Whisk dressing ingredients together
Step 3
3. Add chickpeas to a small bowl and top with ½ the dressing
Step 4
4. Add remaining dressing to the salad and toss
Step 5
In a small bowl add the chickpeas and then pack in the salad
Step 6
5. Flip the bowl over onto a plate and enjoy!
