VEGETARIAN ZUCHINNI BOATS & STUFFED PEPPERS
I concocted these myself using plant based meat.

Ingredients
7 servings
1 lbplant based burger

2 teaspoonsminced garlic

1onion
diced

1 tablespoonfresh basil
snipped

1 tablespoonfresh rosemary
snipped

1 tablespoonfresh parsley
snipped

1 tablespoonblack pepper

½ cupsugar free marinara sauce

2zuchinni
large, halved, flesh scooped

3peppers
tops cut off, seeds removed
16 ouncescanned rice Red Beans & Rice

1can sweet kernel corn

2 cupsshredded swiss cheese
Instructions
Step 1
Add olive oil to skillet. Brown the Impossible Plant based meat with onions and garlic. Add herbs, black pepper, drained corn, drained can red beans and rice, & marinara sauce. Fill prepared zuchinni boats and peppers with mixture. Sprinkle with parsley. Bake at 375 until done.
