Instructions

Step 1
to a small clean chicken cut into pieces, add 1/2 cup yogurt, 2 cardamom pods, ½ teaspoons cumin, 1 tsp saffron, 2 cloves, 1 star anise, 1 bay leaf and one cinnamon stick along with some salt and 1 tbsp ginger garlic paste.
Step 2
leave chicken for at least 2 hours or preferably overnight
Step 3
soak 3 cups of basmati rice for ½ hour
Step 4
bring approximately 6 cups of water to a boil or half of a big pot along with 1 tsp of salt per cup of rice and a pinch of whole geera and boil rice until it is tender and fluffy
Step 5
strain rice and set aside
Step 6
add chicken to q pot on low flame along with marinade until it starts to spring water
Step 7
cover chicken and let cook until almost finished approx 20 minutes. Fluff rice if finished cooking.
Step 8
to a blender, add approximately 4 tomatoes and blend followed by 2 white onions. A hot pepper can be added depending on spice tolerance.
Step 9
set aside spices ; 1 tsp garam masala, 1 tsp turmeric, 1 teaspoon of coriander powder, 1 tsp chili powder and 1 tbsp ginger garlic paste
Step 10
add about ½ cup of oil to a large pot and let it heat up. Add onion tomato puree and ginger garlic paste and wait 30 seconds
Step 11
after 30 seconds are up, add all spices previously set aside see step 9
Step 12
cook until the puree becomes a nice holden orange colour and add chicken to pot and mix.
Step 13
Cover the pot and leave on heat for approximately 5 minutes.
Step 14
make yogurt water by adding water to 2 tbsp yogurt until a runny consistency is achieved.
Step 15
fry 1 potato in cubes, followed by 3 sliced onions, best to do this at the beginning
Step 16
In rice pot, spread some butter or ghee fluff rice, and add your first layer of rice(approximately ⅓ of rice) and spread some yogurt water on it. followed by potatoes and onion and lastly half of the chicken with half of the sauce.
Step 17
repeat step 16 one more time and add the final layer of rice on top
Step 18
cover pot with lid and let steam for approximately 15 minutes
Step 19
serve with something refreshing
