Ingredients
4 servings
1sweet potato
medium
ghee
fresh ginger
asafoetida
digestive masala
superspice, or cooling masala
salt
pepper
kale
olive oil
fresh lime juice
Instructions
Step 1
Preheat oven to 400⁰.
Step 2
Peel and cube sweet potatoes and place in dish. Drizzle with 1 TBS ghee and turn to coat. Bake until soft with slightly golden crust, about 25 minutes.
Step 3
Heat skillet over medium-low heat and add remaining 1 TBS ghee. Add ginger and toast for about 15 seconds, until ginger strips brown slightly, then add the asafoetida, masala, black pepper, salt, and kale. Use salad tongs to mix well, then cover and cook for 2 to 3 minutes, until the kale wilts. Kale is done when it is soft and succulent yet vibrant green.
Step 4
Garnish the kale with 2 tsp olive oil and sprinkle of lime. Serve sweet potatoes hot on a bed of sautéed kale.
