Instructions

Step 1
Spray a small frying pan with low calorie cooking spray and place over a medium-low heat. Add the onion and fry for 10-15 minutes, gently and slowly, until caramelised and softened.
Step 2
Add the garlic and apple to the pan of onion and stir well. Increase the to medium and fry for about 5 minutes until the apples are golden.
Step 3
Add 60ml cold water, the thyme, mustard and Worcestershire sauce and stir.
Step 4
Reduce the heat to low and cook gently for about 5 minutes until the apples have broken down into a soft mush. You may need to add a tablespoon or two of water if the mixture starts to dry out - the mixture should have a thick, spreadable consistency. Season to taste with salt and pepper. Set aside.
Step 5
Preheat the grill to high. Spray a baking tray with low calorie cooking spray. Season the pork steaks with a little salt and pepper and place on the baking tray. Place the tray of pork under the grill for about 8 minutes, turning the steaks occasionally, until cooked through and there’s no sign of pinkness. They may need less or more time under the grill, depending on their thickness.
Step 6
When the pork steaks are cooked, remove them from the grill and reduce the temperature to medium. Spread the apple mixture evenly on top of the pork, sprinkle the cheese on top of the apple mixture and place under the grill for 5 minutes until the cheese has melted and is golden. Serve at once with an accompaniment of your choice.
