Ingredients

4sourdough slices
thick cut

oil
Optional, for toasting sourdough in pan

1 x 15 ozcan cannellini beans
drained and rinsed well

0.5juice of lemon
large

ΒΎ tspkosher salt

ΒΌ tspblack pepper

1 clovegarlic
large, sliced

3 Tbspextra virgin olive oil

cupsun-dried tomatoes packed in oil
drained and slices

β
cuppitted kalamata olives
halved or quartered

2 Tbspfresh dill
finely chopped

lemon juice
to serve
Instructions
Step 1
Blend beans, olive oil, lemon juice, garlic, salt and pepper in a food processor until smooth.
Step 2
Add a bit of water or more olive oil if you prefer it thinner.
Step 3
Toast the sourdough slices in a hot pan with a bit of oil on both sides until golden brown.
Step 4
When toast cools a bit, top with white bean hummus, tomatoes, olives, dill, and a small squeeze of extra lemon juice. π±πΏ
