For those times when you are in a hurry and craving a delicious warm beef stew, this recipe is for you. It is simple to do and will give you all the satisfaction of a slow simmered beef stew in only 30 minutes.

Instructions
Step 1
Toss in a medium bowl the meat, 2 tablespoons of olive oil, peri-peri sauce and lemon juice. Let sit for 5 minutes. In the image is the peri-peri sauce that I use.

In a medium non-stick saucepan, heat 1 teaspoon of olive oil over medium-high heat. Add the beef and stir occasionally until beef is browned.

Add the mushrooms and shredded carrots. Cook for another 5 minutes.

In a medium bowl, stir well the beef stock, the gravy mix packet, the dried parsley and oregano.
Step 5
Add mixture into the pan. Bring to a boil and then reduce heat to medium-low. Cover and let simmer with the lid on for about 15 to 20 minutes. Stir occasionally.
