Filling
1 x 150gvermicelli rice noodles
1 tspbutterfly blue pea powder
0.5lime
1carrot
⅓ cupfresh spinach
2avocados
0.25red cabbage
black sesame seeds
Spicy peanut dip
⅓ cuppeanut butter
1 Tbspsoy sauce
1 Tbsplime juice
or lemon
1 Tbspmaple syrup
1 Tbspsesame oil

hot, to thin - add more if needed, or coconut milk from a can

Instructions
~ Unicorn vermicelli noodles 🦄🍬 ~
Step 1
Boil a pot of water, then turn off the heat. Add in the tsp of butterfly pea superfood powder and stir until the color changes to blue.
Step 2
Add rice noodles to the pot, or pour the boiling blue hot water over the noodles in a wide bowl, covering them completely.
Step 3
Swish the noodles around briefly to separate them. Soak the noodles for 6-10 minutes, until tender but still chewy.
Step 4
Drain the noodles and wash under running cold water, to avoid sticking. You will now have blue rice noodles!!

Julienne the carrot and red cabbage.
Prepare the PB Dipping Sauce
Step 6
Place all the ingredients apart from the warm water into a small bowl and whisk.
Step 7
To thin, add warm water or coconut milk and mix to reach your desired consistency.
Prepare the Rice Paper
Step 8
Soften the rice paper wrappers one at a time: Dip a rice wrapper into a large bowl of warm water for 5-10 seconds.
Step 9
Remove while it’s “bendy” but not yet soft (it will continue to soften once removed).
Assemble

Start about an inch from the wrapper edge, layering your fillings (see video/photo). Keep in mind that whatever ingredients you place first, will be at the top of the roll.
Step 11
Wrapping the rolls is quite easy once you get the knack of it - especially as it’s similar to how you roll a burrito. Carefully tuck in the edges, then continue to roll until sealed.
Step 12
Serve immediately. Store leftovers up to 2 days.
