Instructions
Step 1
Adjust an oven rack to the lower third of the oven and preheat to 450°F.
Step 2
Put the broccoli, cauliflower, carrots, onion, and garlic in a 9x13 baking dish and drizzle with the olive oil. Season with the salt and pepper to taste and toss well.
Step 3
Roast, stirring every 10 min or so, until the vegetables are tender and browned on the edges, 26-30 min. remove the baking dish from the oven and top the vegetables with the Parmesan.
