Instructions

Step 1 In your slow-cooker pan, fry the chopped onion until soft. Add the chopped chilli and crushed garlic. Fry for 1 minute. Add all the spices and brown sugar and give it a good stir. Step 2 In the same pan, add the aubergines and sweet potato. Fry for 5 minutes. Add the tin of tomatoes. Fill the can up with water and add that in. Add the sweet corn and chickpeas and give another good stir. Step 3 Put the pan into the slow-cooker and cook on low for 7 hours or high for 3 hours. Step 4 Before serving, chopped up the pineapple into squares and grill for 5 minutes or until slightly charred and caramelised. Top with the pineapple and serve.
