1. Combine flour, baking soda and salt
in a bowl. Add water and ¼ cup oil; stir
to form a dough. Transfer to a floured
work surface; knead for 2 minutes or
until smooth. Divide into two balls; roll
out each ball into a 9½-inch x 6½-inch
oval, ⅓-inch thick.
2. Heat an oiled indoor grill pan (or a
frying pan) over high heat. Cook bread
for 2 minutes each side or until lightly
charred and cooked through. Rub with
garlic and season with salt.
3. Combine tomatoes, basil, vinegar
and remaining oil in a medium bowl;
season with salt and pepper to taste.
Top piadina with tomato mixture, salami
and mozzarella; season with salt and
pepper to taste.
