Crispy Oat Granola
This granola is the perfect topper for smoothies and smoothie bowls. We also love noshing on this crispy, subtly sweet granola with a touch of plant-based milk or on its own. While the cranberries are an optional add-in, we are obsessed with their tart, sweet flavor and chewy texture!

Ingredients
8 servings

2 cupsrolled oats

1 cupshredded coconut unsweetened

1 cupchopped walnuts

½ cupspeanuts

2 tablespoonschia seeds

2 tablespoonshemp seeds

½ cuppumpkin seeds

½ cupsunflower seeds

2 tablespoonsground flaxseed

1 teaspoonground cinnamon

¾ teaspoonsalt

2 tablespoonssunflower oil
organic

¼ cup100% maple syrup

1 teaspoonvanilla extract

½ cupdried cranberries

Instructions
Step 1
Preheat the oven to 125deg C. Line a rimmed baking sheet with parchment. Or if using an air fryer remove the bottom tray

Step 2
In a large bowl, combine the ingredients except for the oil, vanilla, maple syrup and cranberries.
Step 3
In a small jug, whisk the sunflower oil, and vanilla into the maple syrup.
Step 4
Add the syrup mixture to the oat ingredients and mix thoroughly. Pour into the the air fry and cook until it is golden brown, stirring every 10 minutes
Step 5
Cool completely, then stir in the dried cranberries, if using. Transfer to an airtight container and store for several weeks.
