Step 1
1. Prepare Rice according to instructions
2. chop the onion, mince garlic and ginger
3. cut potatoe into 1x1 inch cubes leave onthe skin
4. peel carrot and roughly chop
5.Heat oil in pan over meadium hi heat. 6. add onions and cook for 5 minutes
7. once onion is trnaslucent add ginger and garlic. stir together. after about one minute add the dry spices and stir to combine. cook for one additional minute,
8. add one cup water to pan and add potatoes and carrots. bring to a boil, reduce heat and let simmer for 10-15 minutes.
9. about 5 minutes before the potatoes are done cooking add shrimp. stir after two to three minutes to cook shrimp evenly on both sides. no water should be remaining in the pan.
10. stir the peas and tomatoes intothe veggie mix. and warm thrrough, this should take a minute or two. remove from pan and add rice and yogurt. 11. mix together well. serve topped with cilantro and jalapeno if desired.
