Ingredients

1 lblean ground chicken
3 tablespoonshoney
1 tablespoonsesame oil
2 tablespoonslow sodium soy sauce
or coconut aminos
2 tablespoonschili garlic sauce
like sriracha
2 clovesgarlic
minced
1 tablespoonginger
grated
2 teaspoonscornstarch
14 ozshredded cabbage
3 color, cole slaw mix
1 bunchgreen onions
chopped
¼ crice vinegar
2 Tbspextra virgin olive oil
½ tspsesame oil
1 tsphoney
1 bunchcilantro
12yellow corn tortillas
Instructions
Step 1
Make slaw: in small bowl, whisk together evoo, rice vinegar, sesame oil, and honey. Pour over cole slaw and toss. Refrigerate at least 30 min before serving.
Step 2
Make chicken glaze: in small bowl, whisk together honey, soy sauce, garlic, ginger, sesame oil, chili garlic sauce, and corn startch. Set aside.
Step 3
Make chicken: heat 1tbsp olive oil in pan and add in ground chicken. Cook through, chopping it up as it cooks down. When just about cooked through, add glaze and reduce heat, stirring occasionally. Let simmer until glaze has thickened and chicken has cooked through.
Step 4
Make tacos: heat up tortillas (wrap in damp paper towel and heat in microwave in 30 sec increments until all tortillas warmed), add spoonful of chicken mixture, followed by spoonful of coleslaw. Sprinkle with green onion and cilantro.
