Step 1
In med skillet, cook bacon over med heat until it starts to brown. Transfer bacon to a paper towel lined plate. Let the fat in she skillet cool a bit the generously brush two Madeleine pans with grease. Finely dice cooled bacon.
Step 2
Oven 400. In a med bowl, whisk together the flour, cornmeal, baking powder, salt, smoked paprika, and baking soda. In a separate small bowl, mix together buttermilk, olive oil, and honey.
Step 3
Make a well in the center of dry ingredients. Add the buttermilk mixture and stir until partially incorporated, but some of the flour is still visible. Add the diced bacon, chives, and sun-dried tomatoes and fold until just combined.
Step 4
Fill the mold indentations ¾ full with batter. Tap pans on the counter to settle batter. Bake 7-8 min, until centers spring back when touched. Cool for 1 min in the pan before removing Madeleines to a wire rack. Best served same day.
