2 teaspoonsolive oil

1onion
chopped

2carrots
sliced into half-moons

3ribs celery
chopped

1potato
large, or turnip, cut into dice-size pieces

2 teaspoonsfresh rosemary
minced

3cloves garlic
minced

red pepper flakes

1bay leaf

1 x 14.5 ouncescan low-salt diced tomatoes

½ cupdried black lentils

7 cupsvegetable broth

¼ teaspoonsalt

1 cuppasta shapes
small, like shells or stars or whatever

5 cupsgreen cabbage
shredded, or kale

2 teaspoonsred wine vinegar

lemon
juice

fresh parsley
chopped

¼ cupfresh basil
minced

Instructions
Step 1
Grab a large soup pot and heat the oil over medium heat.
Step 2
Add the onion, carrots, and celery and sauté until the onion starts to look golden brown, 3 to 5 minutes.
Step 3
Add the potato, rosemary, garlic, pep- per flakes, and bay leaf.
Step 4
Cook for another 30 seconds to get the gar- lic going.
Step 5
Add the diced tomatoes and lentils and give it another 30

seconds.
Step 7
Now, pour in all the broth and let that motherfucker come to a simmer.
Step 8
Reduce the heat and let that go at a gentle pace until the lentils are almost cooked but the potato is tender, about 15 minutes.
Step 9
Next, add the salt, pasta, and cabbage (if using kale, don't add it yet) and keep the pot gently simmering until the pasta is cooked all the way, 5 to 10 minutes, depending on your pasta.
Step 10
(If you are using kale, fold it into the pot after the pasta is all cooked and let that pot sim- mer for 2 more minutes.
Step 11
Add the vinegar and lemon juice, stir well, and remove from the heat.
Step 12
Fold in the parsley and basil and let the pot sit for a minute or two.

Taste to see whateverthefuck else it might need, like pepper or more rosemary to taste.
Step 14
Pull out the bay leaf and serve right away.
