A North African dish perfect for breakfast. Made of poached in a slightly spicy tomato and bell pepper sauce. Finished off with fresh chopped herbs and feta. Written for 2, but could easily add more eggs to feed more people. Served with bread for dipping.

Instructions

Step 1
1. Heat 12 inch skillet over medium heat. Add 1 Tbsp oil to coat pan.
Step 2
Add garlic and spices to the pan and stir for 1 min. Add in tomato sauce, peppers, and spinach. Cook until warmed through for 2 min.
Step 3
Crack eggs into pan and simmer for 4-6 min covered until egg whites are set and yolks film over.
Step 4
Off heat add feta and herbs. Spoon into bowls and enjoy!
