1clove of garlic
2 tspolive oil
1 tspsalt
1 tspsmoked paprika
½ tspcumin
3 Tbspchipotle adobo sauce
2 Tbsprefried beans
Coriander lime rice
guacamole
1 tspcoriander
1 Tbspwhite onion
diced
1 Tbspjalapeños
sliced
2 Tbspvegan cheese
2eggs
50gplain flour
80gPanko bread crumbs
Substitute for egg
60gplain flour
6 Tbspwater
cold
oil for frying
Instructions
Step 1
1. In a med-high heated pan, add your oil and cook off your Vivera Tex Mex for 4 mins.
Step 2
2. Then add your salt, cumin and smoked paprika.
Step 3
3. Toss in your peppers, onions, garlic and chipotle adobo sauce. Cook for 2 mins.
Step 4
4. Now assemble your burrito with refried beans, coriander lime rice, your tex mex, guac, coriander and diced onions, jalapeños and vegan cheese.
Step 5
5. Then carefully wrap and seal seam side first in a pan.
Step 6
6. Coat in plain, egg or flour wash then into your Panko bread crumbs
Step 7
7. Fry at 180°c for 3-4 mins or until golden and crispy
