Instructions

Step 1
1. Cut up the onions rough and fry them (5-10 minutes)
Step 2
2. Whilst waiting, cut up the sweet
Step 3
3. Add curry powder, cumin and any other spices and stir (2 minutes)
Step 4
4. Add sweet potato and stir
Step 5
5. Add chopped tomato, veg and stock
Step 6
6. Stir and wait for 5 minutes
Step 7
7. Wash the lentils
Step 8
8. Add the lentils, cover and simmer for 15-20 minutes (Until veg is tender)
Step 9
9. Add chickpeas and stir for 10 more minutes
Step 10
All to cool mildly, season as needed.
