Step 1
Prepare the meat by leaving it to rest at room temperature for at least 2 hours before you cook it.
Step 2
Trim all the excess fats, cut them into large pieces, and generously season with salt and pepper. Sear it in a pan for about 2min on each side. Don’t cook it. Remove the beef and let it rest.
Step 3
In the same pot add carrots, celery, garlic, and shallots. Sauté for about 4,5min and when softened enough add the tomato paste. Stir well and then deglaze with the red wine. Return the beef, and add beef stock, and herbs. Bring to a boil on high heat and then reduce to medium-low and cook for about 4 hours.
Step 4
Once the meat is ready, remove it from the pot and cover it with foil on a separate plate. Strain the liquid and set aside.
Step 5
Make the mashed potatoes by boiling them until they’re soft enough. Mash them with whole milk, butter, 2,3 tbsp sour cream, salt, and pepper. Give everything a good mix. You need to reach soft and silky consistency, so adjust any of the ingredients if needed.
Step 6
Add the braised liquid into a pan along with some butter. Add the beef chunks to the mixture to warm them up.
Step 7
Plate the mashed potatoes and the beef on top. Generously spoon from the sauce and top with chives.
