Saltfish cakes grace tables every year for Thanksgiving or Christmas. They are only made for special occasions as they were a lot of work.

Instructions

Step 1
cook the salted fish and drain off the salt water (2ce)
Step 2
Add the plain cod fish and cook together; flake and mash up well
Step 3
brake up the boiled potato and combine with mashed fish
Step 4
Add in 1 tbsp of olive oil and the rest ingredients; mix together well till well combined.
Step 5
Mould into your desired shapes; roll in flour, brush with remaining olive oil
Step 6
place in the air fryer or oven at 160 degrees celsius
Step 7
After 10 minutes, turn upside down and bake for another 10 minutes.
Step 8
leave them to cool before serving with any sugar free dressing of your choice.
