Instructions
Step 1
cook the salted fish and drain off the salt water (2ce)
Step 2
Add the plain cod fish and cook together; flake and mash up well
Step 3
brake up the boiled potato and combine with mashed fish
Step 4
Add in 1 tbsp of olive oil and the rest ingredients; mix together well till well combined.
Step 5
Mould into your desired shapes; roll in flour, brush with remaining olive oil
Step 6
place in the air fryer or oven at 160 degrees celsius
Step 7
After 10 minutes, turn upside down and bake for another 10 minutes.
Step 8
leave them to cool before serving with any sugar free dressing of your choice.

1. I replaced 2/3 of the saltfish with plain fish. This helped to reduce the sodium content plus there was enough fish as stated in the recipe. the taste of the fish was even as they were cooked and mashed together
2. I ommited the butter to reduce saturated fat and replaced it with olive oil.
3. I added additional egg yolk which made it rich in the inside
4. I added ginger, capers, parsely and corriander to enhance its flavour added nutrients
5. I cooked them in the airfryer and they also cooked well in the oven as I tried both methods. This method was to reduce fat in deep frying. They tasted very delicious despite their cookin methods.
