This is a rich and spicy rice dish with stewed onions, garlic, tomatoes and plenty of dried chilli flakes, but with the cooling addition of sliced banana at the end.

Step 1
Start by grabbing a high-sided pan and pan-frying the tomato purée, onion, garlic and red pepper in a splash of oil over a medium heat for about 5 minutes. Then add the chilli flakes, chopped tomatoes, rice, water and stock cube. Season and simmer for about 10 minutes until the rice is cooked (adding more water if required). Finally, add the chopped banana, season to taste and serve.
