Ingredients

2 packetsramen chicken flavored
3 tablespoonsvegetable oil
2garlic cloves
minced
1 teaspoonminced ginger
0.5red onion
medium, finely diced
1carrot
finely diced
2 tablespoonssoy sauce
1 teaspoondistilled white vinegar
1 teaspoonsriracha
3 cupsspinach
roughly chopped
lime juice
1 tablespoonroasted unsalted peanuts
crushed
Instructions
Step 1
In large pan on medium heat add oil. Once oil simmers, add garlic, ginger, onion, and carrot. Cook 4 to 5 minutes until veggies soften and ginger browns.
Step 2
Add soy sauce, vinegar, Sriracha, and one flavor packet. Add spinach, noodles from both packs (split in half), 1/2 cup water. Stir.
Step 3
Reduce heat to low, cover, cook 5 to 7 minutes until water is absorbed. Stir occasionally to break up noodles.
Step 4
Add generous squeeze of lime juice. Sprinkle peanuts on top.
