Instructions
Step 1
Wash daal and soak for 30 mins
Step 2
Boil water, add daal, let it come to boil again and then simmer for 7-8mins, then drain daal. It shouldnt lose shape and be about 95% done. Set the Daal aside
Step 3
In oil add 5/6 chopped green chillies and fry for a bit. Add ginger and garlic pastes and 1 tbsp water
Step 4
Blend 2 tomatoes and add to the oil and fry for about 2 mins
Step 5
Add and fry the masalas (salt, red chilli powder, turmeric and coriander powder) for 2 mins
Step 6
Add cinnamon stick, black pepper and mango powder and cook on medium heat for 5mins until masala is ready and leaves oil
Step 7
Add daal and fry on high heat for 5 mins
Step 8
Add Fenugreek leaves, garam masala, fresh coriander. Turn heat low, cover and cook for 2 mins (Add 2-3tbsp water if needed)
Step 9
Heat up desi ghee with crushed garlic and add to daal
Step 10
Tip: Take daal out before it is fully done to ensure it doesnt break and become mushy. Also make sure you add more oil than normal to ensure it fries properly and doesn’t stick together.
