Instructions
Step 1
1. Dice onion and chop carrots, beans and tofu into small pieces
2. Heat olive oil in a frying pan and add onion and minced garlic and cook until translucent
3. Add tofu and fry until golden on all sides
4. Add carrot and beans and cook until tender
5. Mix in coconut milk and curry paste and cook until sauce thickens
6. Cook rice according to instructions 7. Divide into 4 and serve
