The Euge Food Pineapple Fried Rice

I love fried rice. Easily one of my favourite dishes of all time because it is super versatile and perfect for when you have a lot of leftovers. It really helps when the rice is 1 day old too.
The demo for the pineapple bowl is on my TikTok and IG, check it out! If you don't want to make a pineapple bowl a regular bowl is fine.
The key to the success of this dish is to have all your ingredients prepped well in advanced.

Instructions
Step 1
Optiona: prep your pineapple bowl. I have a TikTok and a IG Reels demo o how to do it, it's a little hard to describe in words.
Step 2
Chop up the pineapple into little triangles.
Step 3
Dice the pepper, shallots, garlic, ginger.
Step 4
Slice the scallions and keep the white separate from the greens. You will want to cook the whites before the greens.
Step 5
Prep your protein, I'm using shrimp. But if you are using Chicken or beef, cut them into small pieces so they cook quickly. Make sure to season now.
Step 6
Crack your eggs.
Cooking Part
Step 7
Fried rice is always better cooked in a wok because of the ability for it to be cooked at a super high temperature. The temperature of the wok is on highest it can go until the very end.
Step 8
Have an empty bowl set aside to put all your ingredients that are half cooked. This is a traditional way of making fried rice that is more from the Northern part of China.
Step 9
Cook the protein first in oil (shrimp in this case). As soon as the shrimp starts to turn bright orange, take it off the heat. The residual heat will cook the shrimp the rest of the way through because shrimp is often over cooked. Place in the bowl.
Step 10
Cook the eggs in oil and season salt. Do a light scramble and set aside in the bowl when they are still creamy so they don't over cook. Cook the pineapple on their own. They have a lot of moisture and the enemy of the a good fried rice is water. Cook until there is a little caramelization (browning) on the pineapple. Set aside in the bowl.
Step 11
Cook the shallots, garlic and ginger in oil for about 30 seconds, season with salt. Then add the scallion whites and cook for another 30 seconds. Add the bell peppers and cook for 1 minute, season with salt.
Step 12
Add the rice and break it up so there are no clumps. Cook the rice for about 2-3 minutes to make sure every grain has been cooked. If it feels like it's too dry. Feel free to add more oil. The oil helps the rice to not stick as well.
Step 13
Add the bowl of protein, shrimp and pineapples. Set the heat to low.
Step 14
Mix it all together and then add the ketchup, soy sauce and fish sauce.
Step 15
Serve in the pineapple bowl and enjoy!
