Ingredients

2 teaspoonsolive oil
divided

1sweet potato
medium, peeled and sliced thinly

16 ouncesmushrooms
cleaned and sliced

1red onion
medium, sliced

2 cupsspinach
packed

¼ cupwalnuts

¼ teaspoonred pepper flakes

½ teaspoonitalian seasoning

¼ teaspoononion powder

¼ teaspoongarlic powder

½ teaspoonginger powder

¼ teaspoonpink Himalayan salt
more to taste

¼ teaspoonblack pepper
more to taste

1egg
whisked

1 teaspoonchia seeds

½ cupoats
for gluten-free bread crumbs if needed
Instructions
Step 1
Preheat the oven to 400 degrees

Step 2
Place the sweet potato in a bowl on a Drizzle with 1 teaspoon olive oil, 1 teaspoon salt, and 1 teaspoon pepper. Place on baking sheet lined with parchment paper. Roast for 15-20 minutes.
Step 3
In a medium skillet over high heat cook the mushroom, onions, for about 10 min adding the spinach for the last 2 minutes until soft.
Step 4
Let the sweet potatoes and mushrooms cool.
Step 5
Add the sweet potato to a blender and pulse a few times, add the mushroom mixture and pulse another few times, so it's chunky, not creamy, and does completely blend.
Step 6
Remove from the blender to a bowl and add the spices, egg, and chia seeds, folding in all together. If it feels to loose add some of the oats or breadcrumbs to bind, just a little at a time
Step 7
Line a baking sheet with parchment paper and bring the oven temperature down to 350 degrees.
Step 8
Make 6 patties and bake on the sheet for 30 minutes, then flip them and bake another 5 minutes
