Easy courgette and chickpea pasta
A super simple courgette pasta with added chickpeas for protein! Can be made vegan easily.

Instructions
Step 1
Grate your courgette into a frying pan and add the butter/vegan butter. Add the garlic and chili flakes if using. Cook on a medium heat for about 15 mins until the courgette is soft.
Step 2
Bring a pan of salted water to the boil and cook your pasta according to packet instructions.
Step 3
When your courgette is cooked, add a tin of drained chickpeas into the same pan. Season with salt and pepper.
Step 4
When your pasta is cooked, add some pasta water to the veg, and a little lemon juice. Add more seasoning if required.
Step 5
Mix together and serve with hard cheese and extra black pepper.
