Flourless Sweet Potato Pancakes

I took the basic premise of the flourless banana pancake and used sweet potato instead. I really like how these turned out.

Instructions

Step 1
Beat eggs. Add cooked, cooled, and mashed sweet potato. Beat until smooth using coconut milk to thin until you have the desired consistency. Add remaining ingredients and cook on heated skillet. [Note: These are not as sturdy as a flour batter so smaller pancakes are easier to flip.]
Step 2
Serve with your favorite pancake toppings. Pictured above: chopped toasted pecans, drizzle of sweetened condensed milk, and pomegranate seeds.
