Step 1
Preheat your grill to maximum. Bring a kettle of water to the boil.
Step 2
Melt the coconut oil in a frying pan over a medium heat. Add the leeks and a pinch of salt. Fry for 5 minutes until softened.
Step 3
Meanwhile, pour the boiling water into a saucepan. Drop in the gnocchi and cook according to packet instructions, then drain into a colander. Shake off any excess water, then tip the gnocchi into a small ovenproof dish. Spoon the leeks on top of the gnocchi.
Step 4
Mix the veg stock with the double cream and mustard. Pour this over the top of the gnocchi, then scatter with the cheese. Grill until bubbling, then allow the gnocchi to rest for a few minutes before eating.
